How to cook lentil soup (German recipe)

Recipe:

lentils (for 2 persons I take ca. 150 gr.)

For cooking the soup in a normal pot you have to soak the lentils for some hours in water, you can put the lentils in water the evening before.

4-5 potatoes
3 carrots
celery
1 big leek or 2 smaller leeks (negi)
parsley
3 smoked sausages (or you can use “Wiener” sausages)
smoked pork belly if you want
2-3 spoons instant vegetable stock / broth
to taste some salt

Soak the lentils over the night, then cook them with the soak water ca. 2 minutes, after that do it in a colander (that’s what my mother told me to do, she said that the lentils did not taste bitter then 🙂 )

After that put the lentils in the pot with some fresh water.

Cut the carrots, potatoes, celery in small cubes, then add to the pot with the lentils. (of course peel the potatoes, carrots and celery before 😉 )

Cut the leek and add to the pot

cut the smoked sausages, add to the pot

cut (dice) the pork belly and fry the pork belly cubes a little bit in a pan and add then to the pot (you can also cook the soup without pork belly just with the sausages, if you want)

add some water to feel and 1 – 2 spoons of the instant vegetable stock

cook it for ca. 20 minutes on a low flame

after that try it and add to feeling either still some vegetable broth or some salt

to serve some parsley on top
