Croquettes or Potato Croquettes are a very common side for holiday dishes in Germany. Learn some tricks on how to make them easily in this video.
ingredients
- 1 kg of potatoes
- 6 eggs
- a bit of salt
- some nutmeg (optional)
- 40 g corn starch or potato starch
- 120 g breadcrumbs, maybe more
- 1 bottle of deep-frying oil
Instructions
- Remove the skin from the potatoes and cook them in salted water until tender.
- Remove the water and put the pot back on the hot stove so that the remaining water on the potatoes
- evaporates. The potatoes should really be dry.
- Mash the potatoes, then add the yolks of 3 eggs, the starch, a little salt and nutmeg.
- Mix everything well.
- Fill the mashed potatoes into a large piping bag with a really large opening.
- Sprinkle some starch on a board or baking sheet that will fit in your freezer later.
- Put thick thick mashed potatoes on the board.
- Cut the strings into smaller portions of about 5 cm.
- Put the board in the freezer for about 20 minutes.
- In a bowl, stir the remaining three eggs.
- Transfer the breadcrumbs to another bowl.
- Take the potato servings out of the freezer and place them one at a time in the scrambled eggs first, then roll
- them in the breadcrumbs and set them aside.
- Heat the frying oil in a saucepan and fry the croquettes in the oil until they turn golden orange.
- Remove and serve the croquettes, or let them cool and freeze for later.
