2 lbs bison meat, cut into 1-inch cubes

1 C. minced yellow onion
1/2 C. minced celery
2 cloves garlic, minced
2 tbsps flour
4 C. low-sodium chicken broth
1 C. water

Directions
- For 4 mins per side sear your bison in 2 tbsps of canola, in a large pot.
- Now place the meat to the side.
- Add 1 more tbsp of canola, to the pot, and begin to stir fry your celery and onions for
7 mins. Then add in the garlic and fry it for 4 mins. Top the mix with flour and stir
everything. - Now add the following: thyme, broth, parsley, wine, tomato sauce, salt, cloves, and pepper.
- Get the mix boiling then once it is add in the bison. Set the heat to low and let the stew
cook for 65 mins. - Enjoy.
