How is Hollandese sauce made?
Heat water in a deep saucepan.
Put the butter in a small saucepan.
Melt the oil on low heat without burning it.
Pass the melted butter through a strainer and let it sit warm.
Put the egg yolks, lemon juice and cold water in a glass bowl.
Put the glass bowl on the heated water.
Mix constantly with the help of a whisk.
When the egg yolks become creamy at the end of about 3 minutes, put the bowl on the kitchen counter.
Leave the whipped egg yolks for a short time to warm.
Then mix the melted butter with the egg yolks.
When the sauce becomes a fine cream, add sea salt and black pepper.
