Stick Bread: Campfire Bread on a Stick

No, this is not a typo, I really mean Stick Bread because it is baked on a stick over a campfire. But in some way, it is also a breadstick. See how the dough is made and how we bake it over a fire.

 

INGREDIENTS

  • 400 g Flour All purpose or bread flour
  • 1 tbsp Sugar
  • 7 g Yeast instant
  • 300 ml Milk lukewarm
  • 1 tsp Salt
  • 2 tbsp Oil i.e. olive oil
  • 1 clove Garlic optional
  • some Herbs fresh or dried, optional

INSTRUCTIONS

  • Put the flour into a large bowl, add the sugar and some of the milk.
  • Sprinkle the yeast on top of the milk, mix in slightly and let activate.
  • Add the remaining milk and start kneading the dough.
  • When the dough starts to come together, add the salt and the oil.
  • Knead for about 8 minutes.
  • Optional: Add some garlic and/or herbs to the dough and mix it in for one to two minutes.
  • Cover the dough and let it rest for about an hour or until it has about doubled in size.
  • Divide the dough into 6 portions and shape each portion into a long string. If the dough doesn’t keep the shape, let it rest for 5 minutes and try again.
  • Wrap each string around the end of a branch, long enough to keep a good distance to the fire.
  • Over a campfire or firepit, bake the bread while turning the stick to make sure it is baked from all sides.
  • The stick bread is ready when the crust is nice evenly brown and the dough is no longer moist.
  • Enjoy with butter or just like that.
