Ingredients
2 (15-oz.) cans chickpeas,
rinsed and drained
1 cup minced carrot
1 cup minced celery
1 cup minced red bell pepper
¾ cup minced cucumber
⅔ cup minced zucchini
½ cup minced red onion
½ cup minced green onion
¼ cup Italian salad dressing
3 garlic cloves, minced
2 Tbsp. capers, with liquid
¼ tsp. paprika
¼ tsp. salt
⅛ tsp. black pepper
⅛ tsp. cayenne pepper
12 slices whole-wheat bread
or Italian bread
1 to 2 Tbsp. olive oil,
or as needed
Directions
- Mash chickpeas with a fork in a very large bowl. Stir in carrot, celery, red bell pepper, cucumber, zucchini, red onion, green onion, Italian dressing, garlic, capers, paprika, salt, black pepper, and cayenne.
- Spoon chickpea mixture on half of bread slices. Brush oil on 1 side of remaining slices and put, oiled sides down, on sandwich.
