EASY MIXED BERRY SYRUP

Drizzle this syrup on pancakes or ice cream. Use it as the base for a berry lemonade or vinaigrette. Or do as we did and turn it into a cocktail: 1 oz. syrup, 1 oz. lime juice, and 2 oz. vodka over ice.

Ingredients

1½ cups fresh mixed berries
[We used a blend of strawberries,raspberries, and blackberries.]
2 Tbsp. water
⅓ to ⅔ cup sugar

Method

Mash berries in a small saucepan with a potato masher. Add water and bring to a boil. Reduce heat; simmer until berries are soft and juicy, about 5 minutes. Strain through a fine-mesh sieve into a measuring cup, discarding solids. Return liquid to saucepan with an equal amount of sugar. Bring to a boil, stirring to dissolve sugar. Simmer until just syrupy, about 1 minute. Skim off any foam. (Syrup keeps up to 2 weeks, covered and chilled.)
