FARMERS MARKET VEGETARIAN QUESADILLAS

Ingredients

1 Tbsp. olive oil
1 cup chopped red bell pepper
1 cup chopped zucchini
1 cup chopped yellow squash
1 cup sliced mushrooms
¾ cup chopped red onion
¼ tsp. salt
6 (8-inch) whole-wheat tortillas
2¼ cups shredded sharp cheddar
cheese (9 oz.)
Sour cream and salsa (optional)

Directions

  1. Heat oil in a large pan over mediumhigh heat. Add bell pepper, zucchini, yellow squash, mushrooms, onion, and salt. Cook, stirring occasionally, just until tender, about 7 minutes. Remove from pan.
  2. Coat pan with cooking spray. Lay a tortilla in pan and sprinkle with ½ cup cheese. Spread with ¾ cup vegetable mixture and sprinkle with another ¼ cup cheese. Top with another tortilla; cook until golden, 2 to 3 minutes per side. Repeat with remaining ingredients. Cut each quesadilla into 6 wedges. Top with sour cream and salsa (if using).
