Labskaus from Hamburg – a specialty that originally was a sailor’s food. It’s known in different versions all over the north of Europe.

Ingredients
- 1 kg Potatoes
- 600 g Beets cooked or pickled
- 400 g Pickles
- 200 ml Pickle Liquid
- 1 can Corned Beef
- 4 ct. eggs
- 4 ct. herrings, cooked
Instructions
Peel and then boil the potatoes in salted water. Cut the Corned Beef, beets, and pickles into smaller pieces and but them into a blender. Blend until everything is combined. Remove the water from the potatoes. Then mash them. Add the blended ingredients and mix everything well. Fry the eggs. Serve the Labskaus with an egg on top and a cold herring as a side, decorate with some beets and pickles.
