This is a very classic northern German dessert. It is fresh, fruity, sweet and super delicious. The cinnamon makes it a perfect dessert for the fall and winter time but it is also very refreshing in the summer. Traditionally you top the jelly with a vanilla sauce or vanilla ice cream.
Here is what you need:
- 2 cups of mixed berries (300 grams)
- 4/5-1 cup of cherry juice (or another red fruit juice)
- 1 cinnamon stick
- 1 vanilla bean
- 1 Tbs of cornstarch mixed with a little bit of water
You can substitute the cornstarch and vanilla bean with some vanilla pudding mix.
Let’s get started:
1. Melt the sugar in a small pot. Scrape out the vanilla bean
2. Once the sugar is melted add the juice, cinnamon stick and the vanilla seeds. Let it cook for 5-8 minutes.
3. Now add the corn starch mixture and the berries. Let it cook for another 3 minutes.
4. Refrigerate the jelly and serve it with vanilla sauce or ice cream. When serving it with ice cream you could also eat it warm.
