Spitzbuben are short biscuits stuffed with jam. These little treats as pretty as tasty and a very typical recipe in Germany. Easy and quick to make, they are usually served during the Christmas time and the end of year holidays to the delight of all gourmands.
Spitzbuben are a sandwich cookie made of an almond shortcrust pastry, held together by raspberry jam, with a peek-a-boo window in the center, and then sprinkled in powdered sugar.
These german cookies have many names: Spitzbuben, Hildabrötchen or Linzer Augen for example… the recipes vary a bit by the amount of the ingredients or what kind of jam/marmalade is used!
👉🏼 INGREDIENTS (FOR CA. 45 COOKIES):
For the cookie dough:
• 100 g of ground almonds
• 300 g of flour
• 150 g of powdered sugar
• 1 pinch of salt
• 200 g of butter cooled
• 1 egg
• 2 tsp of vanilla extract
For the filling:
• 200 g of red jam (raspberry, strawberry, cherry …)
Other utensils:
• Biscuit cutter set – customize your cookies with cut-out shapes
which you can fill with jam
Baking time: 180°C / 10 – 12 minutes
