Ingredients

  • 3 cups of rice
  • 100 grams of currants
  • 200 grams of chestnut
  • 1 onion
  • 100 grams of butter
  • Salt
  • Black pepper
  • 1 teaspoon of ginger
  • 1 teaspoon of cinnamon
  • 1 teaspoon of cloves
  • 4.5 cups of hot chicken broth
  • 100 grams of dried apricots
  • 100 grams of pistachios
  • 1 bunch of dill

How to make rice with chestnut?

Wash the rice and drain it. Soak the currants and peeled chestnuts in hot water. Saute the chopped onions in butter until they turn pink. Add the rice and fry until the rice becomes transparent. Add salt and spices and mix. Add the hot chicken stock and cook with the lid closed.

Add the currants, chestnuts, dried apricots cut into cubes, finely chopped dill and pistachios, which are almost softened to the water absorption of the rice, and mix. Cook for 15-20 minutes on low heat and remove from heat. Cover it with a paper towel and rest for 10 minutes. Serve hot with baked chicken.
